What is in the hospitality pack
A new venue settles its suppliers in the first few weeks, usually with whoever got there first rather than whoever quoted best. These are the trades we report, and we report them the week they appear rather than once they turn up on a list months later.
Restaurants
The largest group in the pack by a wide margin, from a first restaurant to a second location for an operator who already knows what they are doing. A kitchen fitting out is deciding on food, drink, equipment and service contracts all at once, and almost none of that is out to tender.
Cafes, bars and pubs
Cafes, bars, brown pubs and beach pavilions. Drink-led venues turn over faster than kitchens and buy differently, with more weight on brewery and distributor relationships that are set early and rarely revisited once the taps are running. Seasonal sites run on a calendar of their own.
Cafeterias, snack bars and fast food
Cafeterias, snack bars and fast food, including the franchise rollouts that arrive in several towns within weeks of each other. Often owner-run, usually fitting out at speed, and buying frying, packaging and supply in the same short window. A quick trade to reach and an easy one to miss.
Pizzerias, takeaway and delivery
Pizzerias, takeaway kitchens and delivery-only operations. A growing part of the market and the fastest to open, frequently in a unit that was something else last month, which makes them easy to miss without watching for them. Packaging and ovens are chosen at once.
Lunchrooms and coffee places
Lunchrooms, coffee bars, sandwich shops and breakfast places. Small footprints, quick to open, and a market where a coffee roaster or bakery supplier who is in the door first tends to stay there. A low fit-out cost means more of them open, and more change hands.

The pack is not five categories. It also carries brasseries, bistros, grill houses, sushi and every national cuisine Google distinguishes, caterers, ice cream parlours, tea rooms and lunch cafes. If it serves food or drink to the public and it opened this week, it is on the list.
